Sign a non-disclosure form that you will not divulge the recipe. Yes, said Nothing Bundt Cakes franchise co-owner Mara Fortin. The recipe that is used to bake the nine flavors available to customers is that guarded of a company secret.
Now the 12 employees of the newly opened Santee location of Nothing Bundt Cakes will do just that. Judging from the disappearing red velvet samples on hand at the Santee Chamber’s ribbon cutting ceremony held on Nov. 13, that form is needed.

Chamber President John Olsen said Nothing Bundt Cakes is a welcome addition to the Santee business community.
Fortin recalls hearing from her customers, “You should open a location in Santee.” She listened and did just that. It took around six months from start to finish for the partnership, to pull it off. The Fortins own all six of the County stores.
Bundt cake flavors available include red velvet, pecan praline, white chocolate raspberry and more. Cakes are frosted, in a floral like pattern, with velvety cream cheese and real butter. On the lighter side, a touch of a drizzle frosting is available as well. A variety of cake toppers are added to celebrate birthdays, baby showers, or other life events.
The sizes vary with 8-10 inches, tiered, bundtlets, and bundtinis for sale. Wrapped bundtlet towers are also available for every season and holiday. Birthday cards, specialty candles, plates and many more cake related items are available.
Fortin highlighted that male chefs have come in to other locations and tried to identify the secret ingredient. While applesauce is a common suggestion it is not the secret ingredient. The cakes are baked on the premises.
Other customers told Fortin that they have never bought a store-bought Bundt cake but said, “This is the only store-bought one I will eat” after sampling one of her products.
The new location is at 9836 Mission Gorge Road just south of the Target Store. They are open Mon-Sat: 9 a.m. -8 p.m., and 10 a.m. to 6 p.m. on Sunday.
